Delicious Peanut Butter Recipes from Disney Parks

National Peanut Butter Lover's Day is celebrated annually on March 1st.  We've got some delicious Disney recipes for you to try out at home.

Disney Parks are known for their delicious foods and snacks. Throughout the years Disney has published some of their recipes online for all to enjoy.  During the early days of the Covid-19 pandemic many recipes were published to bring a little Disney Magic to all of our homes. Disney called this Cooking Up The Magic At Home and we looked forward to each and every one!

Here's a few peanut butter recipes that we just love here at Picturing Disney.

Prepare cupcakes per directions on box. Let cool completely.  This is a good time to make your frosting, since you will have approximately an hour of baking and cooling.  (You can also cheat and use canned frosting.)
  • Using a sharp knife, cut a cone shape out of the top of the cupcake. Cut halfway into the cupcake. Remove the cake and fill the hole with fudge frosting. You can use a pastry bag or create your own by cutting the corner of  a ziplock bag. Add the cake you removed to the top of the cupcake, with the pointy cone end sticking up. Once frosted this forms a nice peak.
  • Spread the frosting on your cupcakes and let sit for 30 minutes.
  • While the frosting is setting, use a food processor to crush up Butterfingers. (Frozen Butterfingers work best.)  If you do not have a food processor, use the flat side of a meat tenderizer while Butterfingers are still in their packaging.
  • Combine the chocolate chips and oil in a medium microwave-safe bowl. Heat on high for 1 minute. Stir and continue to heat at 30 second intervals until completely melted. Allow to cool for 5-10 minutes before using.
  • Dip the frosted cupcakes into the chocolate. Use a spoon to hold the frosting in place atop cupcake.  Immediately coat the cupcake with the crumbled Butterfinger bits.. repeat until all cupcakes are dipped and covered.
  • Refrigerate approximately 1 hour to allow the chocolate to set.

Peanut Butter Rolls:

From: Disney California Adventure's Lamplight Lounge.

For Rolls:
  • 8 slices wheat bread
  • 3/4 cup creamy peanut butter, divided

Jelly Drizzle:

  • 3/4 cup strawberry or grape jelly

For Peanut Butter Rolls:

  1. Cut crusts off bread. Flatten bread with rolling pin until bread can bind after being rolled.
  2. Spread 1 1/2 tablespoons of peanut butter evenly on each slice of flattened bread, leaving small boarder on all sides. The peanut butter will spread as you roll.
  3. Starting with long side of bread, gently roll up each bread slice into spiral. Cut each roll into 4 even pieces.
  4. Place 8 pieces of rollups onto each plate, seam-side down.

For Jelly Drizzle:

  1. Place plastic quart-size freezer bag into small cup, folding back first few inches of bag over top of cup. Spoon jelly into bag, gently shaking bag to move jelly to bottom of bag. (Note: If jelly is too thick to drizzle, add small amount of warm water to jelly in small bowl and mix to desired consistency before adding to bag).
  2. Once filled, lift bag from cup and squeeze out excess air from bag and seal bag with a few twists to top of bag. Cut bottom corner of bag with scissors.
  3. Holding right below the twisted top of bag with one hand and guiding with free hand, gently squeeze to drizzle jelly over each peanut butter roll with zigzag motion.
