Mondays Bite! Walt's Favorite Chili Recipe!

After coming home from my first Disneyland trip last year (or as my colleagues at work say, my “motherland”) I was itching for something classic Walt and with the dawn of the fall on the horizon and the school year beginning Walt’s Own Chili recipe sounded fabulous! I have since made the recipes another 3-4 times and it makes about 6 servings.  I used the Cooking with Mickey and the Disney Chefs cookbook but you can google fairly easy since it was posted in a Disney Insider and on the D23 site. I added extra of all spices (probably double of what is listed but use your own taste and discretion).

2 lbs. coarse ground beef
2 onions, sliced
2 cloves garlic
1⁄2 cup oil
1 cup chopped celery
2 tsp. chili powder
1 tsp. paprika
1 tsp. dry mustard
1 large can solid pack tomatoes
2 lbs. dry pinto beans
Salt to taste

1.  Soak beans overnightin cold water. Drain.
2.  Add beans to pan, water to cover (2 inches over beans), and simmer with onions until tender (about 2 hours).
3.  Meanwhile, prepare sauce by browning meat and minced garlic in oil.  Add remaining ingredients, and simmer for 1 hour.
4.  When beans are tender, add sauce to beans and simmer for 1⁄2 hour.
5.  Serve topped with some shredded cheddar cheese and enjoy! :]
